Description

Zucchini Quesadillas are crispy tortillas filled with sautéed grated zucchini, melted cheese, corn, and vibrant Mexican-inspired spices. This easy vegetarian recipe makes a perfect light lunch or dinner option packed with flavor and wholesome ingredients.

Ingredients

Main Ingredients

  • 4 large flour or corn tortillas
  • 2 medium zucchini, grated
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup corn
  • 1/4 small red onion, finely diced
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 2 tablespoons fresh cilantro, chopped

Spices

  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Drain Zucchini: Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible to avoid soggy quesadillas.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add finely diced red onion and cook for 2 minutes until translucent.
  3. Cook Zucchini and Garlic: Add the grated zucchini and minced garlic to the skillet, sauté for 4–5 minutes until zucchini softens.
  4. Add Corn and Spices: Stir in corn, chili powder, cumin, salt, and black pepper. Cook for another 1–2 minutes, then remove from heat to finish the filling.
  5. Assemble Quesadilla: Place one tortilla in a clean skillet over medium heat. Sprinkle half of the tortilla with a mix of Monterey Jack/cheddar and mozzarella cheese.
  6. Add Filling and Fold: Spoon the zucchini mixture and sprinkle fresh cilantro over the cheese. Top with additional cheese and fold the tortilla in half.
  7. Cook until Crispy: Cook for 2–3 minutes on each side until the tortilla is golden brown and cheese is melted inside.
  8. Repeat & Serve: Repeat the process with remaining tortillas. Slice each quesadilla into wedges and serve warm with salsa, guacamole, or Greek yogurt.

Notes

  • Removing excess zucchini moisture is essential to prevent soggy quesadillas.
  • Add black beans to the filling for extra protein and heartiness.
  • Use whole-wheat tortillas for increased fiber content.
  • Add diced jalapeño for a spicy kick.
  • You can freeze assembled quesadillas before cooking for convenient, speedy meals later.
