- 2 tablespoons fresh cilantro, chopped

Instructions
- Drain Zucchini: Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible to avoid soggy quesadillas.
- Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add finely diced red onion and cook for 2 minutes until translucent.
- Cook Zucchini and Garlic: Add the grated zucchini and minced garlic to the skillet, sauté for 4–5 minutes until zucchini softens.
- Add Corn and Spices: Stir in corn, chili powder, cumin, salt, and black pepper. Cook for another 1–2 minutes, then remove from heat to finish the filling.
- Assemble Quesadilla: Place one tortilla in a clean skillet over medium heat. Sprinkle half of the tortilla with a mix of Monterey Jack/cheddar and mozzarella cheese.
- Add Filling and Fold: Spoon the zucchini mixture and sprinkle fresh cilantro over the cheese. Top with additional cheese and fold the tortilla in half.
- Cook until Crispy: Cook for 2–3 minutes on each side until the tortilla is golden brown and cheese is melted inside.
- Repeat & Serve: Repeat the process with remaining tortillas. Slice each quesadilla into wedges and serve warm with salsa, guacamole, or Greek yogurt.
