Description

Crispy Zucchini Fritters with Garlic Yogurt Dip are a delightful Mediterranean-inspired appetizer or light meal featuring grated zucchini, fresh herbs, Parmesan cheese, and a creamy, tangy garlic yogurt sauce. These fritters are easy to prepare, pan-fried to golden perfection, and perfect for enjoying fresh zucchini in a flavorful and healthy way.

Ingredients

Fritters

  • 2 medium zucchini, grated
  • 1 teaspoon salt
  • 2 eggs
  • ½ cup all-purpose flour
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped parsley
  • 2 green onions, sliced
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil

Garlic Yogurt Dip

  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped dill
  • Salt and pepper to taste

Instructions

  1. Salt the zucchini: Sprinkle the grated zucchini with salt and let it sit for 10 minutes to draw out excess moisture, which helps the fritters hold together better.
  2. Squeeze out moisture: Using a clean kitchen towel or cheesecloth, firmly squeeze the zucchini to remove as much water as possible to ensure crispy fritters.
  3. Mix ingredients: In a large bowl, combine the drained zucchini with eggs, flour, grated Parmesan cheese, chopped parsley, sliced green onions, garlic powder, and black pepper. Mix until well incorporated.
  4. Heat the pan: Heat olive oil in a skillet over medium heat until shimmering, preparing for pan-frying the fritters.
  5. Form and cook fritters: Drop spoonfuls of the zucchini batter into the hot skillet, then gently flatten each fritter with the back of the spoon. Cook for 3–4 minutes on each side or until golden brown and crispy.
  6. Prepare the garlic yogurt dip: In a small bowl, stir together the plain Greek yogurt, minced garlic, lemon juice, chopped dill, and season with salt and pepper to taste.
  7. Serve: Plate the warm zucchini fritters alongside the garlic yogurt dip and enjoy immediately for the best texture and flavor.

Notes

  • Remove as much moisture from the zucchini as possible to ensure crispy fritters.
  • Serve fritters immediately to retain their crispiness.
  • Leftover fritters can be refrigerated for up to 3 days and reheated in a skillet for best results.
