Ingredients

Dry Ingredients

Wet Ingredients

  • 2 ripe bananas, mashed
  • 1 cup grated zucchini, squeezed dry
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Optional Add-ins

  • 1/3 cup chopped walnuts or pecans
  • 1/3 cup chocolate chips


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease it to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt until evenly combined.
  3. Combine Wet Ingredients: In another bowl, mash the ripe bananas until smooth. Add the grated zucchini (make sure excess moisture is squeezed out), brown sugar, vegetable or coconut oil, eggs, and vanilla extract. Whisk these ingredients together until well blended.
  4. Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the wet mixture, stirring gently just until combined. Avoid overmixing to keep the muffins tender.
  5. Add Optional Ingredients: Fold in the chopped nuts or chocolate chips if you want to add extra texture and flavor.
  6. Fill Muffin Cups: Divide the muffin batter evenly among the 12 muffin cups, filling each approximately 3/4 full to allow room for rising.
