Vietnamese Summer Rolls are light, refreshing rice paper rolls filled with crisp vegetables, fresh herbs, rice noodles, and shrimp. Served with a flavorful peanut dipping sauce, they’re perfect as an appetizer or light meal, offering a healthy and vibrant taste of Vietnamese cuisine.
Ingredients
Summer Rolls
- 8 rice paper wrappers
- 8 cooked shrimp, halved lengthwise
- 2 cups cooked rice vermicelli noodles
- 1 cup lettuce, shredded
- 1 carrot, julienned
- 1 cucumber, julienned
- Fresh mint leaves
- Fresh cilantro
- Fresh basil leaves
Peanut Dipping Sauce
- ¼ cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp hoisin sauce
- 1 tsp sesame oil
- 1–2 tbsp warm water
Instructions
- Prepare the Peanut Sauce: Whisk together creamy peanut butter, soy sauce, rice vinegar, hoisin sauce, sesame oil, and warm water until the mixture becomes smooth and creamy, adjusting water to reach desired consistency.
- Soften Rice Paper Wrapper: Immerse one rice paper wrapper in warm water for about 10-15 seconds until it becomes soft and pliable. Carefully lay it flat on a clean surface to assemble.
- Assemble the Roll: Place a small amount of shredded lettuce, cooked rice vermicelli noodles, julienned carrot and cucumber, and fresh herbs in the center of the rice paper. Top with two halved shrimp pieces arranged neatly.
- Roll the Summer Roll: Fold the sides of the wrapper inward, then roll tightly from the bottom to top, encasing all the ingredients securely. Ensure the roll is compact but not torn.
- Repeat: Repeat the softening, filling, and rolling process with the remaining rice paper wrappers and fillings until all 8 rolls are made.
- Serve: Serve the Vietnamese Summer Rolls immediately alongside the prepared peanut dipping sauce for dipping.
Notes
- Substitute shrimp with tofu for a vegetarian version.
- Keep finished rolls covered with a damp towel to prevent the rice paper from drying out.
