- 2 large eggplants
- 1 cup diced tomatoes
- 1/2 small red onion, diced
- 2 garlic cloves, minced
- 1/2 red bell pepper, diced
- 2 tablespoons fresh parsley, chopped

- 1 cup cooked quinoa
- 1 can (15 oz / 425 g) chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the eggplants.
- Prepare Eggplants: Slice the eggplants in half lengthwise and score the flesh in a crosshatch pattern, then brush the cut sides with 1 tablespoon olive oil and season lightly with salt and pepper.
- Roast Eggplants: Place the eggplants cut-side down on a baking sheet and roast them in the preheated oven for 20 minutes to soften the flesh.
- Scoop Flesh: Remove the eggplants from the oven and carefully scoop out some of the softened flesh, leaving about a 1/2 inch border around the edges. Chop the scooped flesh and set aside.
- Sauté Vegetables: Heat the remaining 1 tablespoon olive oil in a skillet over medium heat. Add diced onion and bell pepper, cooking for 4–5 minutes until softened.
- Add Garlic: Add the minced garlic to the skillet and cook for 30 seconds more to release its aroma.
- Mix Filling: Stir in the chopped eggplant flesh, chickpeas, diced tomatoes, cooked quinoa, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Cook for 5–7 minutes, stirring occasionally, allowing flavors to blend.
- Finish Filling: Stir in fresh lemon juice and chopped parsley to brighten the filling.
- Stuff Eggplants: Spoon the prepared filling into the roasted eggplant shells evenly.
- Bake Stuffed Eggplants: Return the stuffed eggplants to the oven and bake for another 15–20 minutes until heated through and slightly golden on top.
- Serve: Garnish with additional fresh parsley if desired and serve warm as a satisfying vegan main dish.
