  • 1 cup couscous
  • 1 cup vegetable broth or water
  • 14 oz (400 g) firm tofu, pressed and cubed
  • 2 tbsp olive oil, divided
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/3 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/3 cup Kalamata olives, sliced
  • 1/4 cup toasted almonds, roughly chopped
  • Salt and black pepper, to taste

Dressing Ingredients

  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp maple syrup
  • 1 tsp Dijon mustard
  • 1 small garlic clove, minced
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste


Instructions

  1. Prepare Couscous: Follow the package directions to cook the couscous using vegetable broth or water instead of plain water for additional flavor. Once cooked, fluff it with a fork and allow it to cool to room temperature.
  2. Prepare Tofu: Press the tofu to remove excess moisture, then cut it into small cubes. Lightly season the cubes with salt and pepper to enhance flavor.
  3. Cook Tofu: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the tofu cubes and cook for 8–10 minutes, turning occasionally, until all sides are golden brown and crispy. Remove tofu from the skillet and let cool slightly.
  4. Make the Dressing: In a small bowl, whisk together 3 tablespoons olive oil, fresh lemon juice, red wine vinegar, maple syrup, Dijon mustard, minced garlic, ground cumin, salt, and black pepper until well combined and emulsified.
  5. Combine Salad Ingredients: In a large mixing bowl, add the cooled couscous, diced cucumber, halved cherry tomatoes, diced red bell pepper, finely chopped red onion, chopped parsley, chopped mint, sliced Kalamata olives, and toasted almonds.
  6. Add Tofu and Dressing: Gently fold in the crispy tofu cubes, then pour the dressing over the salad.
  7. Toss Salad: Toss gently to evenly distribute the dressing and mix all ingredients thoroughly. Taste and adjust seasoning with additional salt and pepper if needed.
