Ice Cream Base

Thickener
- 1 tablespoon cornstarch
- 2 tablespoons water

Instructions
- Combine base ingredients: In a saucepan, mix together the coconut milk, sugar, maple syrup, vanilla extract, and salt over medium heat.
- Dissolve sugar and heat: Stir the mixture continuously until the sugar dissolves and the liquid is warm but not boiling.
- Prepare cornstarch slurry: In a small bowl, whisk the cornstarch and water together until smooth.
- Thicken the base: Slowly whisk the cornstarch slurry into the warm coconut milk mixture. Cook for 2 to 3 minutes, stirring constantly, until the mixture thickens slightly.
- Cool the base: Remove the saucepan from heat and allow the ice cream base to cool completely to room temperature.
- Chill the mixture: Refrigerate the cooled base for at least 2 hours or until thoroughly chilled, which helps improve the texture of the final ice cream.
- Churn the ice cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
