- 1 1/2 cups chickpea flour
- 1 1/2 cups water
- 1 tablespoon nutritional yeast
- 1/2 teaspoon turmeric
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika

- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 cup sliced mushrooms
- 1 cup baby spinach
- 1/2 red bell pepper, diced
- 1/4 cup cherry tomatoes, halved
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven: Heat oven to 375°F (190°C). Lightly grease a 9-inch oven-safe skillet or baking dish to prevent sticking and prepare for baking.
- Make the batter: Whisk together chickpea flour, water, nutritional yeast, turmeric, garlic powder, smoked paprika, salt, and pepper until smooth. Allow the batter to rest for 5–10 minutes to thicken slightly for better texture.
- Cook the vegetables: Heat olive oil in an oven-safe skillet over medium heat. Add diced onion, sliced mushrooms, and red bell pepper. Cook for 5–6 minutes until the vegetables soften and release their flavors.
- Add spinach: Stir in baby spinach and cook for 1–2 minutes until wilted, incorporating its moisture and nutrients into the vegetable mixture.
- Add the batter: Pour the rested chickpea flour mixture evenly over the cooked vegetables in the skillet. Arrange halved cherry tomatoes on top and sprinkle with chopped fresh parsley for freshness and color.
- Bake: Transfer the skillet to the preheated oven and bake for 25–30 minutes until the center is firm and edges turn lightly golden, ensuring the frittata is cooked through without being dry.
- Rest and serve: Allow the frittata to cool for 5–10 minutes before slicing to help it set and serve it warm for the best flavor and texture.
