For the Caramelized Onions
- 2 large yellow onions, finely diced
- 2 tbsp olive oil
- 1 tbsp vegan butter
For the Dip Base
- 1 cup vegan sour cream
- 1/2 cup vegan mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 2 tbsp fresh chives, chopped
Instructions
- Heat the fat: In a large skillet, heat the olive oil and vegan butter over medium-low heat to prepare for slow caramelizing.
- Cook the onions: Add the finely diced onions to the skillet, seasoning lightly with salt to help draw out moisture. Cook slowly for 25–30 minutes, stirring occasionally, until the onions become deeply golden and richly caramelized.
- Cool the onions: Remove the skillet from heat and let the caramelized onions cool completely to prevent curdling when mixed with the other ingredients.
- Mix the dip base: In a mixing bowl, combine the vegan sour cream, vegan mayonnaise, fresh lemon juice, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until smooth and well incorporated.
- Combine onions and dip: Fold the cooled caramelized onions and chopped fresh chives into the dip base until evenly distributed.
- Chill to meld flavors: Cover the bowl and refrigerate the dip for at least 1 hour. This resting time allows the flavors to fully develop and intensify.
- Serve: Serve the vegan onion dip chilled with your choice of chips, crackers, fresh vegetables, or toasted bread for a delicious appetizer.
