Description

Tuscan Shrimp is a rich and flavorful Italian dish featuring tender shrimp cooked in a creamy garlic sauce with fresh spinach and sun-dried tomatoes. This quick and elegant meal comes together in just 20 minutes, making it perfect for a weeknight dinner. The creamy Parmesan sauce pairs beautifully with shrimp, and it serves wonderfully over pasta, rice, or crusty bread.

Ingredients

Seafood

  • 1 lb shrimp, peeled and deveined

Vegetables and Aromatics

  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach

Dairy

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Seasonings and Oils

  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Heat the olive oil: In a large skillet, warm the olive oil over medium heat to prepare for cooking the shrimp and aromatics.
  2. Cook the shrimp: Add the peeled and deveined shrimp to the skillet and cook for 2 to 3 minutes on each side until they turn pink and opaque. Then, remove the shrimp from the skillet and set aside to prevent overcooking.
  3. Sauté the garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until it becomes fragrant, taking care not to burn it.
  4. Add sun-dried tomatoes: Stir in the chopped sun-dried tomatoes and cook for 1 additional minute to infuse their flavor with the garlic and oil.
  5. Simmer the cream: Pour in the heavy cream, stirring to combine, and bring the mixture to a gentle simmer to thicken the sauce slightly.
  6. Incorporate cheese and seasonings: Stir in the grated Parmesan cheese, Italian seasoning, salt, and black pepper, mixing well until the cheese melts and the sauce becomes creamy.
  7. Wilt the spinach: Add the fresh spinach to the skillet and cook until it wilts down, about 1 to 2 minutes, incorporating it fully into the sauce.
  8. Return shrimp to skillet: Place the cooked shrimp back into the skillet with the sauce and spinach. Cook for an additional 2 minutes until the shrimp are heated through and coated with the creamy sauce.
  9. Serve: Remove from heat and serve immediately. This dish pairs excellently with pasta, rice, or crusty bread to soak up the sauce.

Notes

  • Serve over pasta, rice, or mashed potatoes for a complete meal.
  • Add mushrooms to the sauce for extra flavor and texture.
  • Use half-and-half instead of heavy cream for a lighter version of the sauce.
