Description

A vibrant and aromatic tomato risotto infused with golden saffron threads, creating a rich, creamy, and comforting Italian main course with a beautiful golden hue and balanced flavors.

Ingredients

Main Ingredients

  • 1 cup arborio rice
  • 4 cups vegetable broth, warmed
  • 1 cup crushed tomatoes
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1/4 teaspoon saffron threads
  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. Sauté aromatics: Heat olive oil in a pan over medium heat. Add the finely chopped onion and minced garlic, sautéing until they become softened and fragrant, about 3-5 minutes.
  2. Toast the rice: Add the arborio rice to the pan with the sautéed aromatics. Stir continuously to toast the rice for 1-2 minutes until it is slightly translucent at the edges.
  3. Deglaze with wine: Pour in the white wine and cook, stirring frequently, until the wine has completely absorbed into the rice, about 2-3 minutes.
  4. Add saffron and tomatoes: Stir in the saffron threads and crushed tomatoes, distributing evenly throughout the rice mixture.
  5. Gradual broth incorporation: Begin adding the warm vegetable broth one ladle at a time, stirring continuously. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process for 18-20 minutes, allowing the rice to slowly cook and become creamy and tender.
  6. Finish with cheese: Once the rice is cooked and creamy, stir in the grated parmesan cheese to enhance the richness and texture of the risotto.
  7. Season and serve: Taste and season with salt and black pepper as desired. Serve the risotto warm, optionally garnished with fresh herbs.

Notes

  • Bloom saffron threads in some of the warm broth beforehand to release a stronger flavor and vibrant color.
  • Garnish with fresh herbs such as parsley or basil for added freshness and presentation.
  • Use freshly grated parmesan for the best flavor and melting texture.
  • Stir continuously when adding broth to achieve the perfect creamy consistency of risotto.
