- 3 cups tomato juice
- 1 tbsp unflavored gelatin
- 1/4 cup cold water
- 1 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup finely diced celery
- 2 tbsp finely diced onion
- 2 tbsp chopped pimiento (optional)
Instructions
- Bloom the Gelatin: Sprinkle the unflavored gelatin over the cold water in a small bowl and let it stand for 5 minutes. This allows the gelatin granules to absorb water and swell, which helps it dissolve evenly later.
- Heat Tomato Juice: Pour 1 cup of the tomato juice into a saucepan and heat over medium heat until it’s hot but not boiling. Heating activates the gelatin and dissolves it more effectively.
- Dissolve Gelatin: Remove the hot tomato juice from the heat and stir in the bloomed gelatin until it has completely dissolved, ensuring a smooth mixture without lumps.
- Combine Remaining Ingredients: Stir in the remaining 2 cups of tomato juice, lemon juice, apple cider vinegar, Worcestershire sauce, salt, and black pepper. Mix well to combine all the savory flavors thoroughly.
- Add Vegetables: Incorporate the finely diced celery, onion, and optional chopped pimiento into the tomato mixture to add texture and subtle vegetal notes throughout the aspic.
- Pour and Chill: Pour the mixture into a lightly oiled loaf pan or individual molds to prevent sticking. Refrigerate for at least 4 hours, or until the aspic is completely set and firm to the touch.
- Unmold and Serve: To unmold, briefly dip the outside of the mold in warm water to loosen the aspic gently, then invert it onto a serving plate. Slice and serve chilled with lettuce or a dollop of mayonnaise if desired for a classic presentation.
