Description

These Vegan Baked Beans are rich, smoky, sweet, and savory, made with tender beans simmered in a flavorful tomato-based sauce. They’re an easy plant-based side dish perfect for barbecues, picnics, and family dinners.

Ingredients

Beans and Vegetables

  • 4 cans (15 oz / 425 g each) navy beans or cannellini beans, drained and rinsed
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced

Sauce Ingredients

  • 1 cup tomato sauce
  • 1/3 cup maple syrup or brown sugar
  • 1/4 cup molasses
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons tomato paste
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup vegetable broth

Instructions

  1. Preheat oven: Preheat the oven to 350°F (175°C) to prepare for baking the beans.
  2. Sauté onion: Heat a large oven-safe skillet or Dutch oven over medium heat and add the finely diced onion. Cook for 4–5 minutes until softened and translucent.
  3. Add garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  4. Mix sauce ingredients: Stir in tomato sauce, maple syrup (or brown sugar), molasses, apple cider vinegar, tomato paste, Dijon mustard, soy sauce, smoked paprika, chili powder, black pepper, salt, and vegetable broth to create the flavorful base.
  5. Add beans: Add the drained and rinsed beans to the skillet and gently stir to combine all the ingredients evenly.
  6. Simmer: Bring the mixture to a gentle simmer on the stovetop to allow flavors to meld before baking.
  7. Bake: Transfer the oven-safe skillet to the preheated oven and bake uncovered for 35–45 minutes until the sauce is thick and bubbling.
  8. Rest: Remove the skillet from the oven and let the baked beans rest for 5–10 minutes before serving to allow the sauce to thicken further and flavors to develop.

Notes

  • Use maple syrup for a completely refined-sugar-free option.
  • Add diced jalapeños for heat.
  • Smoked paprika gives the beans their delicious smoky flavor without bacon.
  • For a thicker sauce, bake uncovered for an additional 10 minutes.
  • Leftovers can be refrigerated for up to 4 days.
