Ingredients
Meat and Vegetables
- 1 lb ground beef or lamb
- 1 onion, diced
- 2 carrots, diced
- 1 cup frozen peas
Seasonings and Liquids
- 2 tbsp tomato paste
- 1 cup beef broth
- Salt, to taste
- Black pepper, to taste
- Thyme, to taste
Topping
- 4 cups mashed potatoes
Instructions
- Preheat oven: Preheat your oven to 400 °F (200 °C) to prepare it for baking the pie.
- Brown meat and vegetables: In a skillet over medium heat, cook the ground beef along with the diced onion and carrots until the meat is browned and the vegetables are softened.
- Add tomato paste and broth: Stir in the tomato paste and beef broth, then reduce the heat and simmer the mixture for 5 minutes to allow the flavors to meld and the sauce to thicken slightly.
- Mix in peas and season: Add the frozen peas and season the mixture with salt, pepper, and thyme according to your taste. Stir well to combine all ingredients evenly.
- Assemble the pie: Spread the meat and vegetable mixture evenly in a baking dish. Carefully top with an even layer of creamy mashed potatoes, smoothing the surface with a spatula.
- Bake: Place the baking dish in the preheated oven and bake uncovered for 20 minutes, or until the mashed potato topping is golden and heated through.
Notes
- For a crispy potato crust, broil the shepherd’s pie briefly after baking until the top is golden brown and slightly crisp.
- Try substituting traditional mashed potatoes with sweet potatoes for a flavorful twist and extra nutrients.
- This recipe can easily be made gluten-free by ensuring the beef broth and tomato paste used are gluten-free.
