Ingredients
Chicken and Sauce
- 1½ lbs boneless skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- ⅓ cup teriyaki sauce
- 2 tbsp soy sauce
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 tsp cornstarch
- 1 tbsp water
Additional Ingredients
- 1 cup pineapple chunks (fresh or canned, drained)
- 2 green onions, sliced
- Sesame seeds for garnish (optional)
Instructions
- Heat the oil: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat to prepare the pan for cooking chicken.
- Cook chicken: Add the bite-sized chicken pieces into the skillet. Cook, stirring occasionally, until the chicken is browned on all sides and nearly cooked through, about 6 to 8 minutes.
- Sauté garlic and ginger: Stir in the minced garlic and grated ginger to the skillet. Cook for about 30 seconds until fragrant, taking care not to burn them.
- Add sauces and pineapple: Pour in the teriyaki sauce, soy sauce, and honey. Add the pineapple chunks to the skillet as well, mixing everything together to combine flavors.
- Simmer: Bring the mixture to a gentle simmer, allowing the sauce to meld with the chicken and pineapple.
- Thicken the sauce: In a small bowl, whisk together the cornstarch and water until smooth. Stir this slurry into the skillet and cook for 2 to 3 minutes until the sauce thickens to a glossy consistency.
- Garnish and serve: Remove from heat and sprinkle with sliced green onions and optional sesame seeds. Serve the teriyaki pineapple chicken hot over cooked rice or noodles for a complete meal.
Notes
- Chicken thighs can be used instead of chicken breasts for a juicier texture.
- Add diced bell peppers or broccoli florets for extra vegetables and nutrition.
- Fresh pineapple is preferred for the best flavor and texture, but canned pineapple chunks work well too.
