- 1/2 small onion, finely diced
- 1 red bell pepper, finely diced
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 1/3 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons water
Wraps and Toppings
- 12 large butter lettuce leaves
- 1/2 cup shredded carrots
- 1/2 cup cucumber, finely diced
- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Prepare Teriyaki Sauce: In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, cornstarch, and water until smooth and set aside.
- Cook Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the diced chicken and cook for 5–7 minutes or until fully cooked and lightly browned.
- Add Vegetables: Stir in the diced onion and red bell pepper, cooking for an additional 3 minutes until slightly softened.
- Add Aromatics: Add minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
- Incorporate Sauce: Pour the prepared teriyaki sauce into the skillet. Cook for 2–3 minutes, stirring often, until the sauce thickens and evenly coats the chicken and vegetables.
- Prepare Lettuce: Thoroughly wash and dry the butter lettuce leaves to ensure crispness.
- Assemble Wraps: Spoon the teriyaki chicken mixture into each lettuce leaf. Top with shredded carrots, diced cucumber, sliced green onions, and sprinkle with sesame seeds.
- Serve: Serve the lettuce wraps immediately for the freshest texture and taste.
Notes
- Ground chicken can be substituted for diced chicken for a different texture.
- Add chopped water chestnuts for extra crunch and texture.
- Serve alongside steamed rice for a more filling meal.
- Incorporate sriracha or chili flakes into the sauce for a spicy kick.
- Romaine or iceberg lettuce can be used if butter lettuce is unavailable.
