Ingredients
Peach Mixture
- 4 cups fresh peaches, peeled and sliced
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Batter
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup granulated sugar
- ½ cup unsalted butter, melted
- ¾ cup milk
Topping
- ½ teaspoon ground cinnamon
- ½ cup brown sugar
- 1 cup boiling water
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9-inch baking dish to prevent sticking.
- Prepare Peaches: In a bowl, combine the peeled and sliced peaches with ¼ cup granulated sugar, lemon juice, and vanilla extract. Mix gently and set aside to marinate.
- Make Batter Dry Mix: In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and the remaining ¾ cup granulated sugar until evenly combined.
- Add Wet Ingredients: Pour in the milk and melted butter to the dry ingredients, stirring until you form a smooth batter with no lumps.
- Assemble Base: Pour the batter evenly into the prepared baking dish, spreading it out to cover the base uniformly.
- Add Peaches: Spoon the peach mixture along with its juices evenly over the batter layer in the dish.
- Sprinkle Toppings: Evenly sprinkle the brown sugar and ground cinnamon over the peaches to add flavor and sweetness.
- Add Boiling Water: Carefully pour the boiling water over the entire dish without stirring. This creates a lovely pudding texture during baking.
- Bake: Place the baking dish in the oven and bake for 45–55 minutes until the top turns golden brown and the pudding bubbles around the edges.
- Cool and Serve: Allow the pudding to cool for 10–15 minutes before serving. Enjoy it warm, ideally topped with vanilla ice cream for added indulgence.
Notes
- Using fresh, ripe peaches yields the best flavor, though canned or frozen peaches can be substituted if fresh are unavailable.
- If using canned peaches, make sure to drain them well to avoid excess liquid.
- Do not stir after pouring the boiling water over the batter and peaches, as this will affect the pudding’s texture.
- For an extra warming spice, add a pinch of nutmeg along with the cinnamon.
- Store leftover pudding covered in the refrigerator for up to 3–4 days to maintain freshness.
- Reheat individual servings in the microwave for a quick and easy treat.
