Description

A crispy and indulgent tempura shrimp sushi roll that combines golden fried shrimp with seasoned sushi rice, fresh avocado, and crisp cucumber, all wrapped in nori sheets. Perfectly crunchy on the outside and fresh on the inside, making for a delightful Japanese main course.

Ingredients

Sushi Rice

  • 2 cups sushi rice, cooked
  • 4 sheets nori

Tempura Shrimp

  • 8 shrimp, peeled and deveined
  • 1 cup tempura batter mix
  • Cold water (as needed for batter)
  • Oil for frying (vegetable or canola oil recommended)

Vegetables

  • 1 avocado, sliced
  • 1 cucumber, julienned

Instructions

  1. Prepare Tempura Batter: In a mixing bowl, combine the tempura batter mix with cold water according to the package instructions, ensuring the batter is cold and slightly lumpy for optimal crispiness.
  2. Fry Shrimp: Dip each peeled and deveined shrimp into the tempura batter, coating evenly. Heat oil in a deep pan or fryer to 350°F (175°C), then fry the shrimp until they are golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels to remove excess oil.
  3. Assemble Sushi Roll: Lay a sheet of nori on a bamboo sushi rolling mat. Spread an even layer of cooked sushi rice over the nori, covering most of the surface but leaving a small margin at the edge to seal the roll.
  4. Add Fillings: Arrange the tempura shrimp, sliced avocado, and julienned cucumber in a line along the edge of the rice closest to you.
  5. Roll Sushi: Using the bamboo mat, carefully roll the sushi tightly away from you, applying gentle pressure to form a compact roll. Seal the edge with a bit of water if necessary.
  6. Slice and Serve: With a sharp knife, slice the sushi roll into 6-8 pieces. Serve immediately with soy sauce or preferred dipping sauce to enjoy maximum freshness and texture.

Notes

  • Keep the tempura batter cold to ensure the shrimp stay crispy after frying.
  • Serve the sushi rolls fresh to maintain the crisp texture of the tempura shrimp and avoid sogginess.
  • Use a very sharp knife moistened with water when slicing sushi rolls to achieve clean cuts.
