Ingredients

- 1 lb ground beef
- 1 small onion, diced
- 2 garlic cloves, minced

- 2 cups beef broth
- 1 can diced tomatoes with green chilies (about 10 oz)

- 2 cups pasta shells or rotini
- 1 cup shredded cheddar cheese
- ½ cup sour cream

Instructions
- Cook the ground beef and onion: In a large skillet over medium heat, cook the ground beef together with the diced onion until the beef is browned and the onion is softened, about 5-7 minutes.
- Add garlic and taco seasoning: Stir in the minced garlic and taco seasoning mixture, cooking for another 1-2 minutes until fragrant and well combined with the beef.
- Add liquids and diced tomatoes: Pour in the beef broth and the can of diced tomatoes with green chilies, stirring to combine all ingredients evenly in the skillet.
- Add pasta and simmer: Add the pasta shells or rotini to the skillet. Bring the mixture to a simmer, then reduce the heat to medium-low.
- Cook pasta until tender: Cover the skillet and let the pasta cook in the simmering sauce for about 15-20 minutes, stirring occasionally to prevent sticking, until the pasta is tender and has absorbed much of the liquid.
- Stir in cheese and sour cream: Remove the skillet from heat. Stir in the shredded cheddar cheese and sour cream until the sauce is smooth, creamy, and the cheese is melted through.
- Garnish and serve: Sprinkle fresh cilantro over the top and serve the taco pasta hot for a delicious, comforting meal.
