Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced

Spices and Liquids

  • 2 tbsp taco seasoning
  • 2 cups beef broth
  • 1 can diced tomatoes with green chilies (about 10 oz)

Pasta and Dairy

  • 2 cups pasta shells or rotini
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream

Garnish

  • Fresh cilantro for garnish


Instructions

  1. Cook the ground beef and onion: In a large skillet over medium heat, cook the ground beef together with the diced onion until the beef is browned and the onion is softened, about 5-7 minutes.
  2. Add garlic and taco seasoning: Stir in the minced garlic and taco seasoning mixture, cooking for another 1-2 minutes until fragrant and well combined with the beef.
  3. Add liquids and diced tomatoes: Pour in the beef broth and the can of diced tomatoes with green chilies, stirring to combine all ingredients evenly in the skillet.
  4. Add pasta and simmer: Add the pasta shells or rotini to the skillet. Bring the mixture to a simmer, then reduce the heat to medium-low.
  5. Cook pasta until tender: Cover the skillet and let the pasta cook in the simmering sauce for about 15-20 minutes, stirring occasionally to prevent sticking, until the pasta is tender and has absorbed much of the liquid.
  6. Stir in cheese and sour cream: Remove the skillet from heat. Stir in the shredded cheddar cheese and sour cream until the sauce is smooth, creamy, and the cheese is melted through.
  7. Garnish and serve: Sprinkle fresh cilantro over the top and serve the taco pasta hot for a delicious, comforting meal.
