Description

This taco bubble up bake is a delightful and easy weeknight casserole combining seasoned ground beef, biscuit dough, salsa, and melted Mexican cheese. It offers a comforting, bubbly, cheesy dish that encapsulates classic taco flavors in a warm, hearty bake perfect for family dinners or meal prep.

Ingredients

Main Ingredients

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 1/2 cup water
  • 1 can (16 oz) refrigerated biscuit dough, cut into quarters
  • 1 cup salsa (or enchilada sauce)
  • 1 cup canned black beans, rinsed and drained (optional)
  • 1 cup frozen corn (optional)
  • 2 cups shredded Mexican blend cheese

Toppings

  • Sour cream
  • Shredded lettuce
  • Diced tomatoes
  • Jalapeños
  • Cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Ground Beef: In a skillet over medium heat, cook the ground beef until browned and fully cooked, then drain any excess fat.
  3. Season Beef: Stir in the taco seasoning packet and 1/2 cup water, simmering for 2 to 3 minutes until the mixture thickens and flavors meld.
  4. Combine Ingredients: In a large bowl, mix the cooked beef with salsa, black beans, and frozen corn (if using) for a hearty filling.
  5. Add Biscuit Dough: Add the quartered biscuit dough pieces to the bowl and gently toss to evenly coat the dough with the seasoned beef mixture.
  6. Assemble Bake: Pour the mixture into the prepared baking dish and spread out evenly for uniform baking.
  7. Top with Cheese: Sprinkle the shredded Mexican blend cheese evenly over the top of the mixture.
  8. Bake: Bake uncovered in the preheated oven for 25 to 30 minutes until the biscuit dough is cooked through and the cheese is melted and bubbly.
  9. Serve: Let the bake cool slightly before serving, then top with your favorite taco toppings such as sour cream, shredded lettuce, diced tomatoes, jalapeños, and cilantro.

Notes

  • Test the center biscuits with a toothpick to ensure they are fully cooked before removing from the oven.
  • Swap out salsa for enchilada sauce if you prefer a saucier casserole.
  • Use reduced-fat cheese and lean ground turkey for a lighter version.
  • This dish is great for meal prep and reheats well in the microwave.
