  • 1/2 cup water
  • 1 can (16 oz) refrigerated biscuit dough, cut into quarters
  • 1 cup salsa (or enchilada sauce)
  • 1 cup canned black beans, rinsed and drained (optional)
  • 1 cup frozen corn (optional)
  • 2 cups shredded Mexican blend cheese

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook the Beef: In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat from the skillet.
  3. Season the Meat: Stir in the taco seasoning and 1/2 cup water to the beef. Simmer for 2–3 minutes, allowing the mixture to thicken and develop flavor.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked beef mixture with salsa, black beans, and frozen corn if using.
  5. Add Biscuit Dough: Add the quartered biscuit dough pieces to the bowl and toss everything together to coat the biscuit pieces evenly with the mixture.
  6. Assemble the Casserole: Pour the entire mixture into the prepared baking dish, spreading it out evenly.
  7. Add Cheese: Sprinkle 2 cups of shredded Mexican blend cheese evenly over the top of the casserole.
  8. Bake: Bake uncovered for 25–30 minutes until the biscuits are cooked through and the cheese on top is melted and bubbly.
  9. Serve: Allow the casserole to cool slightly before serving. Top with sour cream, shredded lettuce, diced tomatoes, jalapeños, and cilantro as desired.
