Ingredients
Chicken and Sauce
- 1 1/2 lbs boneless, skinless chicken breasts
- 1/2 cup low-sodium soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh grated ginger
- 1 tablespoon lime juice
- 1/4 teaspoon black pepper
Salad Bowls
- 6 cups mixed greens or chopped romaine
- 1 cup shredded carrots
- 1 cup shredded red cabbage
- 1 cucumber, sliced
- 1 red bell pepper, thinly sliced
- 1/2 cup edamame
- 2 green onions, sliced
- 2 tablespoons sesame seeds
- Fresh cilantro, optional
Instructions
- Prepare the chicken: Place the chicken breasts at the bottom of the slow cooker, ensuring they are evenly spread out for uniform cooking.
- Make the sauce: In a small bowl, whisk together the low-sodium soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, lime juice, and black pepper until fully combined and smooth.
- Combine chicken and sauce: Pour the prepared sauce evenly over the chicken breasts in the slow cooker, coating them thoroughly.
- Cook the chicken: Cover the slow cooker and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours until the chicken reaches an internal temperature of 165°F (74°C) and is tender enough to shred.
- Shred the chicken: Remove the chicken breasts from the slow cooker and shred them finely using two forks. Return the shredded chicken to the slow cooker, stirring it into the remaining sauce to absorb the flavors.
- Prepare the salad bases: Evenly divide the mixed greens or chopped romaine among six serving bowls as a fresh base.
- Add the vegetables: Top the greens in each bowl with shredded carrots, shredded red cabbage, sliced cucumber, thinly sliced red bell pepper, edamame, and sliced green onions for crunch and color.
- Assemble the bowls: Spoon warm shredded chicken evenly over each vegetable mixture, then drizzle some of the warmed sauce from the slow cooker on top for moisture and flavor.
- Garnish and serve: Sprinkle sesame seeds over each bowl and garnish with fresh cilantro if desired. Serve immediately for a fresh and tasty meal.
Notes
- Use low-sodium soy sauce to better control the salt level in the dish.
- For a summer twist, add slices of avocado, mango, or mandarin oranges to the salad bowls.
- To add spice, incorporate sriracha or red pepper flakes into the sauce before cooking.
- Keep the cooked chicken and fresh salad vegetables separate when storing leftovers to maintain salad crispness.
