Description

These elegant Stuffed Shrimp are filled with a savory blend of panko breadcrumbs, garlic, Parmesan cheese, and fresh herbs, then baked to golden perfection. This recipe is perfect for holidays, dinner parties, or a special seafood dinner, offering a delightful combination of tender shrimp and flavorful stuffing.

Ingredients

Shrimp

  • 1 lb large shrimp (1620 count), peeled and deveined with tails on

Stuffing

  • 1 cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon zest
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp black pepper

To Serve

  • Lemon wedges

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it is hot enough to cook the shrimp evenly and create a golden stuffing crust.
  2. Prepare the Shrimp: Butterfly the large shrimp by carefully slicing along the back without cutting all the way through, creating a pocket for the stuffing. Arrange the shrimp on a lightly greased baking dish, making sure they are evenly spaced.
  3. Make the Stuffing: In a medium bowl, combine the panko breadcrumbs, grated Parmesan cheese, melted butter, minced garlic, chopped parsley, lemon zest, paprika, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  4. Stuff the Shrimp: Spoon a small amount of the breadcrumb mixture onto each butterflied shrimp, pressing gently to ensure it adheres and fills the pocket.
  5. Bake: Place the baking dish in the preheated oven and bake for 12–15 minutes, or until the shrimp turn pink and opaque, and the stuffing is golden brown on top.
  6. Serve: Remove from oven, and serve immediately with fresh lemon wedges on the side to squeeze over the shrimp for added brightness.

Notes

  • Do not overcook the shrimp, as they can become rubbery and tough.
  • Add a pinch of red pepper flakes to the stuffing mixture for a subtle kick of heat.
  • Serve these stuffed shrimp alongside rice, pasta, or a fresh green salad for a complete meal.
