Description

These stuffed peppers are filled with savory Italian sausage, vegetables, and melted cheese for a hearty, low-carb dinner. They’re flavorful, satisfying, and easy to prepare, making them perfect for a comforting family meal.

Ingredients

Vegetables

  • 4 large bell peppers
  • 1 small onion, diced
  • 2 cloves garlic, minced

Meat

  • 1 lb (450g) Italian sausage, casings removed

Other Ingredients

  • 1 cup (240ml) marinara sauce
  • 1 cup (100g) shredded mozzarella cheese
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Preheat Oven. Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the stuffed peppers.
  2. Prepare Peppers. Cut the tops off the bell peppers and carefully remove the seeds and membranes inside. Place the hollowed peppers upright in a baking dish to prepare for stuffing.
  3. Cook Sausage. In a skillet over medium heat, cook the Italian sausage, breaking it apart with a spoon, until browned and cooked through.
  4. Sauté Vegetables. Add the diced onion to the skillet and cook until softened and translucent. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add Flavorings. Stir in the marinara sauce, Italian seasoning, salt, and black pepper into the sausage mixture. Mix well to combine all flavors evenly.
  6. Stuff Peppers. Spoon the sausage mixture into each bell pepper, filling them generously but without overpacking.
  7. Bake Covered. Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 30 minutes. This allows the peppers to soften and the flavors to meld.
  8. Add Cheese and Continue Baking. Remove the foil and sprinkle shredded mozzarella cheese evenly on top of each stuffed pepper. Return to the oven and bake uncovered for an additional 10–15 minutes, or until the cheese is melted, bubbly, and golden.
  9. Serve Warm. Carefully remove the peppers from the oven and serve hot for a satisfying meal.

Notes

  • Use spicy Italian sausage for an extra kick of heat.
  • Add chopped mushrooms to the sausage mixture for additional texture and flavor.
  • Leftover stuffed peppers reheat well in the oven or microwave, making them great for next-day meals.
