Description

Tender chicken breasts are carefully stuffed with creamy basil pesto and melted mozzarella cheese, then baked to juicy perfection. This elegant and flavorful Italian-inspired main course is easy to prepare, making it an ideal choice for both weeknight dinners and special occasions.

Ingredients

Chicken

  • 4 boneless skinless chicken breasts

Filling

  • ¼ cup basil pesto
  • 1 cup shredded mozzarella cheese

Seasoning and Topping

  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp grated Parmesan cheese

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) and allow it to fully preheat to ensure even cooking.
  2. Prepare the chicken breasts: Using a sharp knife, cut a pocket into the side of each chicken breast without slicing all the way through, creating a cavity for the filling.
  3. Stuff the chicken: Fill each chicken pocket with basil pesto and shredded mozzarella cheese evenly. Secure the opening with toothpicks to keep the filling inside during baking.
  4. Season the chicken: Brush the outside of each stuffed chicken breast with olive oil. Then season evenly with garlic powder, salt, and black pepper to enhance flavor.
  5. Arrange in baking dish: Place the stuffed chicken breasts into a greased baking dish in a single layer. Sprinkle grated Parmesan cheese evenly over the tops of the chicken breasts.
  6. Bake: Bake in the preheated oven for 30 to 35 minutes, or until the internal temperature of the chicken reaches 165°F (74°C), ensuring it is fully cooked and juicy.
  7. Rest before serving: Remove the chicken from the oven and let it rest for 5 minutes. Remove toothpicks before serving to avoid choking hazards.

Notes

  • Sun-dried tomato pesto can be used as a flavorful alternative to basil pesto for variation.
  • This dish pairs beautifully with roasted vegetables or your favorite pasta for a complete meal.
  • Be sure to remove all toothpicks before serving for safety.
