  • 4 chicken breasts
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Filling

  • 1 cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tbsp chopped parsley


Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking the stuffed chicken.
  2. Prepare Chicken: Slice each chicken breast horizontally to create a pocket for the filling, being careful not to cut all the way through.
  3. Make Filling: In a mixing bowl, combine softened cream cheese, shredded mozzarella, minced garlic, and Italian seasoning until well blended.
  4. Stuff Chicken: Spoon the cheese mixture evenly into each chicken breast pocket. Use toothpicks to secure if necessary to keep the filling inside during cooking.
  5. Season: Season the outside of each stuffed chicken breast with salt and pepper to enhance flavor.
  6. Sear Chicken: Heat olive oil in a skillet over medium-high heat. Sear each chicken breast for 2–3 minutes per side until golden brown to lock in juices.
  7. Bake: Transfer the seared chicken breasts to a baking dish and put them in the preheated oven. Bake for 20–25 minutes or until the chicken is fully cooked through with no pink inside.
  8. Rest and Serve: Remove the chicken from the oven and let it rest a few minutes before serving to allow juices to redistribute.
