- 4 chicken breasts

- 1 tbsp olive oil
Filling
- 1 cup cream cheese, softened
- ½ cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tbsp chopped parsley
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking the stuffed chicken.
- Prepare Chicken: Slice each chicken breast horizontally to create a pocket for the filling, being careful not to cut all the way through.
- Make Filling: In a mixing bowl, combine softened cream cheese, shredded mozzarella, minced garlic, and Italian seasoning until well blended.
- Stuff Chicken: Spoon the cheese mixture evenly into each chicken breast pocket. Use toothpicks to secure if necessary to keep the filling inside during cooking.
- Season: Season the outside of each stuffed chicken breast with salt and pepper to enhance flavor.
- Sear Chicken: Heat olive oil in a skillet over medium-high heat. Sear each chicken breast for 2–3 minutes per side until golden brown to lock in juices.
- Bake: Transfer the seared chicken breasts to a baking dish and put them in the preheated oven. Bake for 20–25 minutes or until the chicken is fully cooked through with no pink inside.
- Rest and Serve: Remove the chicken from the oven and let it rest a few minutes before serving to allow juices to redistribute.
