Salad
- 1 cup orzo
- 4 cups baby spinach
- 1 cup cherry tomatoes, halved

- 2 tablespoons fresh parsley, chopped
Dressing
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- 1 teaspoon honey
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Season Chicken: In a small bowl, combine olive oil, Italian seasoning, garlic powder, salt, and black pepper. Rub this mixture evenly over the chicken breasts to coat well.
- Cook Chicken: Grill the chicken breasts over medium heat or cook in a pan for 5 to 7 minutes per side until the chicken is cooked through (internal temperature of 165°F / 74°C).
- Rest and Slice Chicken: Remove the chicken from heat and let it rest for 5 minutes to retain juices. Then slice or dice the chicken into bite-sized pieces.
- Cook Orzo: Prepare the orzo according to package instructions. Once cooked, drain and rinse with cool water to stop cooking and cool the pasta down.
- Combine Salad Ingredients: In a large mixing bowl, combine the cooked orzo, baby spinach, halved cherry tomatoes, diced cucumber, thinly sliced red onion, chopped parsley, and crumbled goat cheese.
- Make Dressing: Whisk together olive oil, fresh lemon juice, red wine vinegar, Dijon mustard, minced garlic, honey, dried oregano, salt, and black pepper in a small bowl until emulsified.
- Toss Salad with Dressing: Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
- Add Chicken: Add the sliced chicken to the salad and toss again gently to incorporate.
