Ingredients

Egg Mixture

  • 8 large eggs
  • 1/3 cup milk
  • 1/2 tsp dried oregano
  • Salt and black pepper, to taste

Vegetables & Cheese

  • 2 cups fresh spinach, chopped
  • 1/2 small onion, diced
  • 1 garlic clove, minced
  • 1/2 cup crumbled feta cheese

Other

  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat Oven: Preheat your oven to 190°C (375°F) to ensure it reaches the right temperature for baking the frittata.
  2. Prepare Egg Mixture: In a large bowl, whisk together the eggs and milk until smooth. Season the mixture with dried oregano, salt, and black pepper to taste.
  3. Sauté Aromatics: Heat olive oil in an oven-safe skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until soft and translucent.
  4. Cook Spinach & Garlic: Add the minced garlic and chopped spinach to the skillet. Cook, stirring frequently, until the spinach wilts down and the garlic is fragrant, about 2 minutes.
  5. Add Egg Mixture: Pour the seasoned egg and milk mixture evenly over the cooked vegetables in the skillet.
  6. Top with Feta: Sprinkle crumbled feta cheese evenly over the top of the egg mixture in the skillet.
  7. Set Edges on Stove: Allow the frittata to cook on the stovetop over medium heat for 2 to 3 minutes, just until the edges start to set.
  8. Bake Frittata: Transfer the oven-safe skillet to the preheated oven. Bake for 12 to 15 minutes until the center is just set and the frittata is cooked through.
  9. Garnish & Rest: Remove from the oven, sprinkle with fresh chopped parsley, and let the frittata rest for a few minutes before slicing and serving.
