Ingredients

  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and black pepper, to taste

For the Creamy Polenta

  • 1 cup polenta
  • 4 cups chicken broth
  • 2 tbsp butter
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste


Instructions

  1. Prepare the glaze: In a small bowl, whisk together Dijon mustard, whole grain mustard, maple syrup, red pepper flakes, paprika, garlic powder, salt, and pepper until smooth and well combined.
  2. Season and coat chicken: Season the chicken breasts with salt and black pepper, then coat them evenly with the prepared maple mustard glaze, ensuring each piece is thoroughly covered.
  3. Cook the chicken: Heat olive oil in a skillet over medium-high heat. Once hot, add the chicken breasts and cook for 5–6 minutes on each side or until the chicken is fully cooked through and reaches an internal temperature of 165°F (74°C). Remove from heat and keep warm.
  4. Prepare the polenta: While the chicken cooks, bring the chicken broth to a boil in a separate saucepan. Gradually whisk in the polenta to avoid lumps. Reduce heat to low and cook according to package instructions, stirring frequently, until the polenta thickens and becomes creamy.
  5. Finish the polenta: Stir butter and grated Parmesan cheese into the cooked polenta until fully incorporated and creamy. Season with salt and pepper to taste.
