- 4 cups vegetable broth

Instructions
- Sauté onion and apples: In a large pot, melt the butter over medium heat and add the diced onion. Cook until the onion becomes translucent and fragrant, then add the peeled and chopped apples. Sauté together until the apples start to soften.
- Add pumpkin and spices: Stir in the pumpkin purée along with the vegetable broth. Sprinkle in the cinnamon and nutmeg, mixing well to combine all flavors.
- Simmer: Bring the mixture to a simmer and cook uncovered for about 15 minutes to allow the flavors to meld and the apples to fully soften.
- Blend the soup: Using an immersion blender or carefully transferring to a blender, puree the soup until smooth and creamy in texture.
- Finish with cream: Return the smooth soup to the pot if needed, stir in the cream or coconut milk, and heat gently without boiling to warm through. Adjust seasoning if necessary, then serve warm.

- For a vegan or dairy-free option, substitute butter with olive oil and use coconut milk instead of cream.
- You can adjust the thickness of the soup by adding more vegetable broth if desired.
- Fresh nutmeg gives the best flavor but pre-ground nutmeg works well, too.
