Noodles
- 8 ounces (225 g) rice noodles or ramen noodles
Tofu and Sauce
- 14 ounces (400 g) extra-firm tofu, cubed
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 3 tablespoons soy sauce
- 2 tablespoons agave syrup
- 1 tablespoon rice vinegar
Garnish
- 1 teaspoon sesame seeds
- 2 green onions, sliced
Instructions
- Cook the noodles: Prepare the noodles according to the package directions, then drain and set aside.
- Prepare the tofu: Toss the cubed extra-firm tofu with cornstarch to coat evenly. This helps create a crispy exterior when cooked.
- Cook the tofu: Heat sesame oil in a skillet over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 6-8 minutes.
- Add aromatics: Add minced garlic and grated ginger to the skillet with the tofu. Sauté for about 30 seconds until fragrant, stirring continuously to avoid burning.
- Make the sauce: In a small bowl, whisk together soy sauce, agave syrup, and rice vinegar. Pour this sauce mixture into the skillet with the tofu and cook for a few minutes, stirring until the sauce thickens slightly and coats the tofu.
- Toss noodles with sauce: Add the cooked noodles to the skillet and toss everything together thoroughly until the noodles are evenly coated with the sauce and heated through.
- Garnish and serve: Sprinkle with sesame seeds and sliced green onions. Serve immediately for best texture and flavor.
