This protein-packed bowl combines smoky, tangy, and fresh elements perfect for a wholesome and satisfying main course with vibrant Mexican-inspired flavors.

Ingredients

For the Steak

  • 1 1/2 lbs (680 g) sirloin or flank steak
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lime

For the Bowls

  • 3 cups cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 red onion, diced
  • 1/2 cup shredded lettuce
  • 1/4 cup fresh cilantro

For the Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Prepare the Steak Seasoning: In a small bowl, combine chili powder, smoked paprika, cumin, garlic powder, salt, and black pepper. Rub this seasoning blend evenly over both sides of the steak. Drizzle with olive oil and lime juice to coat thoroughly.
  2. Marinate: Allow the steak to marinate for 15 to 20 minutes to enhance flavor and tenderize the meat.
  3. Grill the Steak: Preheat the grill to high heat. Place the steak on the grill and cook for 4 to 5 minutes on each side or until the steak reaches your desired level of doneness, ensuring a nice smoky char.
  4. Rest and Slice: Remove the steak from the grill and let it rest for 5 to 10 minutes to allow juices to redistribute. Then, slice the steak thinly against the grain for tenderness.
  5. Make the Dressing: In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, cumin, salt, and pepper until smooth and well combined.
  6. Assemble the Bowls: Divide the cooked rice evenly among four bowls. Layer each bowl with black beans, corn, halved cherry tomatoes, shredded lettuce, diced red onion, and sliced avocado.
  7. Add Steak and Dressing: Top each bowl with the sliced grilled steak. Drizzle the prepared lime dressing evenly over the contents.
  8. Garnish and Serve: Sprinkle fresh cilantro on top for a burst of color and flavor. Serve immediately while the steak is warm and enjoy your vibrant Southwest Steak Bowl.

Notes

  • Add sautéed fajita peppers and onions for extra flavor and texture.
  • Swap traditional rice for quinoa or cauliflower rice to make it lower carb.
  • Enhance with salsa, sliced jalapeños, or a dollop of Greek yogurt for creaminess.
  • Substitute chicken breast or thighs if preferred over steak.
