Description

Smoked Salmon Macarons are elegant, savory French macarons filled with a creamy smoked salmon and herb cheese filling. These sophisticated bite-sized appetizers are perfect for cocktail parties, weddings, brunches, or holiday entertaining.

Ingredients

Macaron Shells

  • 1 cup almond flour
  • 1¾ cups powdered sugar
  • 3 large egg whites, room temperature
  • ¼ cup granulated sugar
  • Pinch of salt
  • A few drops of black or gray food coloring (optional)

Smoked Salmon Filling

  • 4 oz smoked salmon, finely chopped
  • 4 oz cream cheese, softened
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon black pepper
  • 1 teaspoon capers, finely chopped (optional)

Instructions

  1. Prepare Macaron Shells: Prepare and bake the macaron shells according to your preferred macaron method, ensuring the shells dry and bake to a smooth finish for proper texture.
  2. Make Filling: Beat together the cream cheese, smoked salmon, dill, lemon juice, lemon zest, black pepper, and capers until the mixture is smooth and well combined.
  3. Pipe Filling: Transfer the smoked salmon filling to a piping bag for controlled application onto the macarons.
  4. Assemble Macarons: Pipe the filling onto half of the cooled macaron shells, then top with the remaining shells to form sandwich cookies.
  5. Chill: Refrigerate the assembled macarons for at least 2 hours before serving to allow the flavors to meld and the filling to firm up.

Notes

  • Prepare the macarons one day in advance for the best texture and flavor development.
  • Garnish with extra dill or a tiny piece of smoked salmon for an elegant presentation.
  • Store refrigerated for up to 2 days to maintain freshness and texture.
