Ingredients
Meat and Vegetables
- 700 g lean ground turkey
- 1 small onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 cup corn (optional)
- ½ cup black beans (optional)
- 2 tbsp fresh cilantro, chopped
Liquids and Canned Goods
- 400 g diced tomatoes
- 1 cup chicken broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tbsp olive oil
Spices and Seasonings
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp chili powder
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Brown the turkey: Heat olive oil in a skillet over medium-high heat. Add the lean ground turkey and cook for 4 to 5 minutes, breaking it apart with a spoon until it is browned but not fully cooked through.
- Sauté vegetables: Add the diced onion, bell pepper, and minced garlic to the skillet with the turkey. Cook for another 3 to 4 minutes until the vegetables soften and become fragrant.
- Transfer to slow cooker: Move the turkey and vegetable mixture into the slow cooker bowl to prepare for slow cooking.
- Add remaining ingredients: Pour in the diced tomatoes, chicken broth, tomato paste, Worcestershire sauce, and sprinkle in the cumin, paprika, oregano, chili powder, salt, and black pepper. Stir everything well to combine all flavors evenly.
- Slow cook: Cover the slow cooker and cook on LOW for 3 to 4 hours or on HIGH for 1½ to 2 hours to allow flavors to meld and turkey to fully cook.
- Add beans and corn: About 30 minutes before the end of cooking, stir in the corn and black beans if using. Continue cooking uncovered to heat them through.
- Garnish and serve: Once cooking is complete, garnish with freshly chopped cilantro. Serve warm over rice, quinoa, or inside wraps as desired.
