Instructions
- Combine Ingredients: Add the chickpeas, finely diced onion, minced garlic, vegetable broth, olive oil, lemon juice, ground cumin, ground coriander, smoked paprika, turmeric, salt, black pepper, and optional cayenne pepper into the slow cooker. Stir well to ensure all seasonings are evenly distributed throughout the mixture.
- Slow Cook: Cover the slow cooker and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours. This will allow the flavors to meld and the chickpeas to become tender.
- Add Fresh Herbs: During the last 15 minutes of cooking, stir in the chopped fresh parsley and cilantro to infuse fresh herbal notes into the dish.
- Mash for Creaminess: For a creamier texture similar to traditional falafel, mash about 1 cup of the cooked chickpeas against the side of the slow cooker and stir them back into the mixture.
