Ingredients
Steak
- 1½ lbs (680 g) skirt steak
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp garlic powder
Chimichurri
- 1 cup fresh parsley
- 2 tbsp fresh cilantro
- 2 cloves garlic
- 2 tbsp red wine vinegar
- ½ cup olive oil
- ½ tsp crushed red pepper flakes
- Salt and pepper, to taste
Bowls
- 3 cups cooked white or brown rice
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1 cup cucumber, diced
- Pickled onions (optional)
Instructions
- Season the steak: Rub the skirt steak evenly with olive oil, garlic powder, salt, and black pepper to enhance its flavor and create a nice crust when cooked.
- Grill the steak: Preheat your grill or grill pan to high heat. Cook the steak for 3–5 minutes on each side, depending on your preferred level of doneness, to get a perfect char while keeping the inside tender.
- Rest and slice: Remove the steak from the grill and let it rest for 10 minutes. This allows the juices to redistribute, ensuring a juicy steak. Then slice the steak thinly against the grain.
- Prepare chimichurri: Combine fresh parsley, cilantro, garlic, red wine vinegar, olive oil, crushed red pepper flakes, salt, and pepper in a blender or finely chop and mix by hand until well combined to create a vibrant sauce.
- Assemble the bowls: Divide the cooked rice among four serving bowls. Top each with sliced steak, cherry tomatoes, diced cucumber, sliced avocado, and pickled onions if using.
- Serve: Generously spoon chimichurri sauce over the bowls and serve immediately for a flavorful and balanced meal.
