Ingredients

Frittata Mixture

  • 1 bottle JUST Egg (about 12 oz)
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup diced onion
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup vegan cheese (optional)

Topping

  • 1/4 cup cherry tomatoes, halved


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the frittata.
  2. Sauté Vegetables: Heat the olive oil in an oven-safe skillet over medium heat. Add the diced onion and bell peppers and sauté until they are softened, about 3-4 minutes.
  3. Add Spinach: Stir in the chopped spinach and cook until it wilts, approximately 1-2 minutes, ensuring all veggies are tender.
  4. Add JUST Egg: Pour the entire bottle of JUST Egg over the sautéed vegetables in the skillet, then gently stir to evenly distribute the mixture.
  5. Season and Add Cheese: Sprinkle garlic powder, black pepper, and vegan cheese evenly over the top of the mixture for added flavor and creaminess.
  6. Add Cherry Tomatoes: Evenly scatter the halved cherry tomatoes over the surface to add a fresh burst of sweetness.
  7. Bake: Transfer the skillet to the preheated oven and bake for 15 to 18 minutes, or until the frittata is fully set and slightly golden on top.
