Ingredients
Frittata Mixture
- 1 bottle JUST Egg (about 12 oz)
- 1/2 cup diced bell peppers
- 1/2 cup chopped spinach
- 1/4 cup diced onion
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup vegan cheese (optional)
Topping
- 1/4 cup cherry tomatoes, halved
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the frittata.
- Sauté Vegetables: Heat the olive oil in an oven-safe skillet over medium heat. Add the diced onion and bell peppers and sauté until they are softened, about 3-4 minutes.
- Add Spinach: Stir in the chopped spinach and cook until it wilts, approximately 1-2 minutes, ensuring all veggies are tender.
- Add JUST Egg: Pour the entire bottle of JUST Egg over the sautéed vegetables in the skillet, then gently stir to evenly distribute the mixture.
- Season and Add Cheese: Sprinkle garlic powder, black pepper, and vegan cheese evenly over the top of the mixture for added flavor and creaminess.
- Add Cherry Tomatoes: Evenly scatter the halved cherry tomatoes over the surface to add a fresh burst of sweetness.
- Bake: Transfer the skillet to the preheated oven and bake for 15 to 18 minutes, or until the frittata is fully set and slightly golden on top.
