Ingredients
For the Skewers
- 1½ pounds large shrimp, peeled and deveined
- 3 cups fresh pineapple chunks
For the Marinade
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- 1 teaspoon salt
- ½ teaspoon black pepper
For Garnish and Serving
- Chopped fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
- Make Marinade: In a large bowl, whisk together olive oil, lime juice, minced garlic, honey, smoked paprika, chili powder, salt, and pepper until well combined.
- Marinate Shrimp: Add peeled and deveined shrimp to the marinade. Toss thoroughly to coat all shrimp pieces. Cover and let marinate for 15 to 20 minutes to absorb flavors.
- Assemble Skewers: Thread the shrimp and fresh pineapple chunks alternately onto the soaked skewers, distributing ingredients evenly.
- Preheat Grill: Heat your grill to medium-high heat, ensuring the grates are clean and lightly oiled.
- Grill Skewers: Place skewers on the grill and cook for 2 to 3 minutes per side. Grill until shrimp turn pink and opaque and pineapple chunks get lightly caramelized and charred on edges.
- Garnish and Serve: Remove skewers from grill, garnish with chopped fresh cilantro, and serve immediately with lime wedges on the side for squeezing over.
Notes
- Avoid overcooking the shrimp to keep them tender and juicy.
- For added color and flavor, alternate bell peppers or red onion pieces between shrimp and pineapple on the skewers.
- This dish pairs wonderfully with coconut rice, quinoa, or a fresh green salad for a well-rounded meal.
