- 1 lb (450 g) large shrimp, peeled and deveined
- 2 eggs, beaten
Rice and Vegetables
- 3 cups cooked cold jasmine rice
- 1 cup frozen peas and carrots
- 3 green onions, sliced
- 2 cloves garlic, minced
Oils and Seasonings
- 2 tbsp vegetable oil
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp grated fresh ginger
- Black pepper, to taste
Instructions
- Heat Oil: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering.
- Cook Shrimp: Add the shrimp and cook for 2–3 minutes per side until they turn pink and are cooked through. Remove shrimp from the pan and set aside.
- Scramble Eggs: Add the remaining tablespoon of vegetable oil to the pan, then pour in the beaten eggs. Scramble them gently until just cooked, then transfer to a plate.
- Sauté Vegetables: In the same pan, add the minced garlic, grated ginger, and frozen peas and carrots. Sauté for 2–3 minutes until the vegetables are heated through and fragrant.
- Stir-Fry Rice: Add the cold jasmine rice to the pan, breaking up any clumps. Stir-fry for 3–4 minutes, mixing thoroughly so the rice absorbs the flavors and gets heated evenly.
- Season Rice: Stir in the soy sauce and sesame oil, coating the rice and vegetables evenly. Adjust seasoning with black pepper to taste.
- Combine Ingredients: Return the cooked shrimp and scrambled eggs to the pan. Toss all ingredients together gently to combine and heat through for about 1 minute.
- Garnish and Serve: Remove from heat, garnish with sliced green onions, and serve the shrimp fried rice hot.
