Ingredients
Base
- 2 tbsp butter

- 2 celery stalks, chopped
Vegetables and Broth
- 2 cups diced potatoes

Dairy and Seasoning
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 tsp thyme

- 200 g shrimp, peeled and deveined

Instructions
- Sauté Aromatics: Melt butter in a pot over medium heat. Add chopped onion and celery, sautéing until softened and fragrant, about 5 minutes.
- Add Vegetables and Broth: Stir in the diced potatoes, corn kernels, and chicken or seafood broth. Bring the mixture to a simmer and cook until the potatoes are tender, about 15 minutes.
- Add Dairy and Seasoning: Stir in milk, heavy cream, and thyme. Allow the chowder to warm through gently, but avoid boiling to prevent curdling.
- Cook the Shrimp: Add the peeled and deveined shrimp to the pot. Cook until the shrimp turn pink and are cooked through, approximately 3-5 minutes.
- Season and Serve: Taste the chowder and season with salt and pepper to preference. Garnish with freshly chopped parsley and serve warm for a comforting meal.
