Peanut Sauce
- ½ cup creamy peanut butter

- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 teaspoon sriracha
- 1 teaspoon grated ginger
Instructions
- Marinate Chicken: In a bowl, combine soy sauce, coconut milk, curry powder, brown sugar, and minced garlic. Add the chicken strips and toss to coat thoroughly. Cover and refrigerate for 30 minutes to allow the flavors to infuse.
- Prepare Skewers: Thread the marinated chicken strips onto wooden skewers, distributing the meat evenly to ensure even cooking.
- Grill Chicken Satay: Preheat a grill or grill pan over medium-high heat. Grill the skewers for 3 to 4 minutes per side, or until the chicken is cooked through and has nice grill marks.
- Make Peanut Sauce: In a bowl, whisk together creamy peanut butter, coconut milk, soy sauce, lime juice, brown sugar, sriracha, and grated ginger until the mixture is smooth and well combined.
