Ingredients
Meat and Oil
- 1 lb ground beef
- 1 tbsp olive oil
Vegetables
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 1 cup frozen peas
Liquids and Seasonings
- 6 cups beef broth
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- ½ cup heavy cream (optional)

- Fresh parsley for garnish
Instructions
- Heat olive oil: Heat olive oil in a large pot over medium heat to prepare for browning the meat.
- Cook ground beef: Add ground beef to the pot and cook until browned thoroughly, breaking it apart as it cooks; drain excess fat if needed to reduce greasiness.
- Sauté vegetables: Add diced onion, carrots, and celery to the pot. Cook for about 5 minutes until the vegetables soften but do not brown.
- Add garlic: Stir in minced garlic and cook for 30 seconds to release its aroma without burning.
- Combine potatoes and liquids: Add peeled and diced potatoes, beef broth, tomato paste, Worcestershire sauce, dried thyme, salt, and black pepper; stir well to combine all ingredients.
- Simmer the soup: Bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for 25 minutes, or until potatoes are tender.
- Add peas and finish cooking: Stir in frozen peas and cook for an additional 3 minutes to heat through.
- Add cream (optional): If desired, stir in heavy cream for added richness and creaminess.
- Adjust seasoning: Taste the soup and adjust seasonings with additional salt or pepper as needed.
- Garnish and serve: Ladle into bowls and garnish with fresh parsley before serving. Serve with crusty bread if desired.
