Description
Sheet Pan Pineapple Meatloaf is a creative and flavorful twist on the classic meatloaf, featuring a sweet pineapple topping and tangy barbecue glaze. This one-pan meal is baked alongside tender broccoli florets, making it an easy and convenient family dinner with minimal cleanup.
Ingredients
Meatloaf
- 1½ pounds ground beef
- 1 cup breadcrumbs
- 1 egg
- ½ cup diced onion
- 2 cloves garlic, minced
- ¼ cup milk
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
Topping & Glaze
- 1 cup pineapple chunks
- ½ cup barbecue sauce
- 2 tablespoons brown sugar
- 1 tablespoon ketchup
Vegetables
- 2 cups broccoli florets
- 2 tablespoons olive oil
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s at the right temperature for baking the meatloaf and vegetables evenly.
- Mix Meatloaf Ingredients: In a large bowl, combine ground beef, breadcrumbs, egg, diced onion, minced garlic, milk, Worcestershire sauce, salt, and black pepper. Mix until just combined to keep the meatloaf tender.
- Shape and Place Meatloaf: Shape the mixture into a loaf form and place it on one side of a sheet pan, leaving space for the vegetables.
- Prepare Glaze and Top Meatloaf: In a small bowl, mix barbecue sauce, brown sugar, and ketchup. Spread half of this glaze evenly over the meatloaf, then arrange pineapple chunks on top for a sweet, tangy flavor burst.
- Prepare Vegetables: Toss broccoli florets with olive oil and spread them on the other side of the sheet pan, ensuring even roasting alongside the meatloaf.
- Bake: Bake in the preheated oven for 40 to 45 minutes. Halfway through baking, brush the meatloaf with the remaining barbecue glaze to build layers of flavor.
- Rest and Serve: Once baked, let the meatloaf rest for 10 minutes. This allows juices to redistribute for a moist, flavorful slice. Slice and serve alongside the roasted broccoli.
Notes
- Ground turkey can be substituted for beef for a leaner option.
- Add carrots or potatoes to the sheet pan for a heartier meal.
- Leftover meatloaf makes excellent sandwiches the next day.
