Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper to prevent sticking and for easy cleanup.
- Prepare Asparagus: Arrange the trimmed asparagus in a single layer on the sheet pan. Drizzle with 1 tablespoon olive oil, then sprinkle with half of the minced garlic, salt, and black pepper. Toss the asparagus gently to coat evenly.
- Roast Asparagus: Place the sheet pan in the oven and roast the asparagus for 7 to 8 minutes until tender but still crisp.
- Marinate Shrimp: While the asparagus roasts, put the shrimp in a mixing bowl. Add the remaining olive oil, minced garlic, fresh lemon juice, lemon zest, paprika, Italian seasoning, salt, black pepper, and red pepper flakes if using. Toss thoroughly to coat the shrimp evenly with the marinade.
- Add Shrimp to Pan: Remove the sheet pan from the oven, then add the marinated shrimp on top of the partially roasted asparagus. Spread everything out in a single layer to ensure even cooking.
- Roast Shrimp and Asparagus: Return the sheet pan to the oven and roast for another 6 to 8 minutes, or until the shrimp turn pink and opaque and are cooked through.
