These Sesame Soba Noodles are a quick, flavorful, and refreshing dish featuring soba noodles tossed in a savory sesame dressing with garlic, ginger, and soy sauce. Perfect as an easy vegan lunch, side dish, or light dinner, they can be served warm or chilled for a versatile meal option.
Ingredients
Soba Noodles and Vegetables
- 8 oz (225 g) soba noodles
- 1/2 cucumber, julienned
- 1 carrot, julienned
- 2 green onions, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 tbsp sesame seeds
- 1 tbsp crushed peanuts, optional
Sesame Dressing
- 3 tbsp tahini
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp maple syrup
- 1 tbsp fresh lime juice
- 1 garlic clove, minced
- 1 tsp fresh ginger, grated
- 1–2 tbsp warm water, as needed
Instructions
- Cook the Soba Noodles: Bring a large pot of water to a boil and cook the soba noodles according to the package instructions, usually about 5 minutes until tender.
- Rinse and Drain: Drain the noodles and thoroughly rinse under cold water to remove excess starch and prevent sticking. Drain well to remove excess moisture.
- Prepare the Sesame Dressing: In a small bowl, whisk together tahini, soy sauce, rice vinegar, sesame oil, maple syrup, lime juice, minced garlic, grated ginger, and 1 to 2 tablespoons of warm water until smooth and well combined.
- Combine Ingredients: Place the cooled noodles into a large bowl and add the julienned cucumber, carrot, sliced green onions, and chopped cilantro.
- Toss with Dressing: Pour the prepared sesame dressing over the noodle and vegetable mixture and toss everything together until noodles and veggies are evenly coated with the dressing.
- Garnish and Serve: Sprinkle sesame seeds and optional crushed peanuts over the top. Serve immediately or chill in the refrigerator before serving for a refreshing cold dish.
Notes
- Rinsing soba noodles thoroughly after cooking prevents them from becoming sticky or clumping together.
- For extra protein and vegetables, try adding edamame, tofu, or shredded cabbage.
- Taste and adjust the dressing by adding extra lime juice or soy sauce if desired.
