Ingredients
Sausage
- 500 g Italian chicken or turkey sausage, sliced
Vegetables
- 2 medium zucchini, sliced
- 1 yellow squash, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 small red onion, cut into wedges
- 1½ cups cherry tomatoes
Seasoning & Garnish
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh lemon juice
Instructions
- Preheat Oven: Preheat the oven to 220°C (425°F) to ensure it’s hot and ready for roasting the ingredients evenly.
- Prepare Ingredients: Arrange the sliced sausage, zucchini, yellow squash, chopped bell peppers, red onion wedges, and cherry tomatoes on a large sheet pan.
- Add Seasonings: Sprinkle minced garlic, Italian seasoning, paprika, salt, and black pepper over the ingredients. Drizzle with olive oil.
- Toss to Coat: Gently toss all ingredients on the sheet pan until everything is evenly coated with oil and seasoning.
- Arrange Evenly: Spread the mixture into a single layer to ensure proper roasting instead of steaming.
- Roast: Place the sheet pan in the oven and roast for 25–30 minutes, stirring halfway through to promote even cooking and browning. The vegetables should become tender, and the sausage cooked through with a slight caramelization.
- Finish: Remove from the oven, drizzle with fresh lemon juice, and garnish with chopped fresh parsley.
