Ingredients

Vegetables

  • 1 lb (450 g) fresh tomatillos, husks removed and rinsed
  • 12 jalapeños, depending on desired heat
  • 1/2 small white onion, cut into chunks
  • 2 garlic cloves, unpeeled

Fresh Herbs and Seasonings

  • 1/3 cup fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons water, as needed


Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the vegetables.
  2. Arrange Vegetables: Place the tomatillos, jalapeños, onion chunks, and unpeeled garlic cloves evenly on a baking sheet.
  3. Roast: Roast in the oven for 15–20 minutes, turning the vegetables halfway through, until the tomatillos are soft and lightly charred to bring out their sweetness and smoky flavor.
  4. Prepare Garlic: Once roasted, remove the garlic cloves from their skins carefully to avoid burns.
  5. Blend Ingredients: Transfer the roasted tomatillos, jalapeños, onion, and peeled garlic into a blender or food processor. Add fresh cilantro, lime juice, salt, and black pepper.
  6. Process Salsa: Pulse the mixture until it reaches your desired consistency. Add one or two tablespoons of water if the salsa is too thick.
  7. Adjust Seasonings: Taste the salsa and adjust salt, lime juice, or jalapeño to your preference for heat and acidity.
  8. Serve: Transfer the salsa to a bowl and allow it to cool slightly before serving. It can be served warm, at room temperature, or chilled.
