Ingredients

Peaches

  • 3 ripe peaches, halved and pitted
  • 2 tablespoons olive oil

Salad Base

  • 5 ounces baby arugula
  • 2 balls (8 ounces) burrata cheese

Toppings & Dressing

  • ¼ cup basil pesto
  • ¼ cup toasted pine nuts or chopped pistachios
  • 2 tablespoons balsamic glaze
  • Fresh basil leaves, for garnish
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for roasting the peaches.
  2. Prepare Peaches: Brush the peach halves with olive oil and arrange them cut-side up on a baking sheet to ensure even roasting.
  3. Roast Peaches: Roast the peaches for 15–18 minutes until they become tender and lightly caramelized. Remove from oven and let them cool slightly before slicing for serving.
  4. Arrange Greens: Place the baby arugula evenly on a large serving platter as the salad base.
  5. Add Burrata: Tear the burrata cheese into pieces and scatter them over the arugula, adding creamy texture.
