Description

These Raw Lemon Slices are a bright, zesty, and naturally sweet no-bake treat made with nuts, coconut, dates, and fresh lemon. They’re simple to prepare and perfect for a healthy snack or light dessert.


Ingredients

Base

  • 1 cup pitted Medjool dates
  • 1 cup raw almonds
  • 1/2 cup shredded unsweetened coconut
  • 2 tbsp coconut oil, melted
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • Pinch of salt

Lemon Topping

  • 1/2 cup raw cashews, soaked for 2–4 hours and drained
  • 2 tbsp fresh lemon juice
  • 1 tbsp maple syrup
  • 1 tbsp melted coconut oil
  • 1 tsp lemon zest
  • 1–2 tbsp water, as needed


Instructions
