Ingredients

For the Chicken

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning

For the Salad

  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or canned, drained)
  • 1 cup black beans, rinsed and drained
  • 1/4 cup finely chopped red onion
  • 1 avocado, diced
  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare the chicken: Coat the chicken breasts evenly with olive oil and taco seasoning. Heat a skillet over medium heat.
  2. Cook the chicken: Place the seasoned chicken in the hot skillet and cook until the outside is nicely browned and the internal temperature reaches 165°F (75°C), about 6-7 minutes per side depending on thickness.
  3. Rest and slice: Remove the chicken from the skillet and let it rest for 5 minutes to retain juices. Then slice or chop the chicken into bite-sized pieces.
  4. Prepare the salad base: Wash and chop the romaine lettuce and add it to a large mixing bowl along with cherry tomatoes, corn, black beans, red onion, diced avocado, and shredded cheddar cheese.
  5. Add chicken: Add the cooked chicken pieces to the salad bowl.
  6. Make the dressing: In a small bowl, stir together ranch dressing, fresh lime juice, and hot sauce if desired for a spicy kick.
  7. Toss and serve: Drizzle the dressing over the salad and gently toss to combine. Top with crunchy tortilla strips just before serving to maintain crispiness.
