Ingredients
For the Chicken
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons taco seasoning
For the Salad
- 6 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh or canned, drained)
- 1 cup black beans, rinsed and drained
- 1/4 cup finely chopped red onion
- 1 avocado, diced
- 1 cup shredded cheddar cheese
- 1 cup tortilla strips
For the Dressing
- 1/2 cup ranch dressing
- 1 tablespoon fresh lime juice
- Optional: hot sauce to taste
Instructions
- Prepare the chicken: Coat the chicken breasts evenly with olive oil and taco seasoning. Heat a skillet over medium heat.
- Cook the chicken: Place the seasoned chicken in the hot skillet and cook until the outside is nicely browned and the internal temperature reaches 165°F (75°C), about 6-7 minutes per side depending on thickness.
- Rest and slice: Remove the chicken from the skillet and let it rest for 5 minutes to retain juices. Then slice or chop the chicken into bite-sized pieces.
- Prepare the salad base: Wash and chop the romaine lettuce and add it to a large mixing bowl along with cherry tomatoes, corn, black beans, red onion, diced avocado, and shredded cheddar cheese.
- Add chicken: Add the cooked chicken pieces to the salad bowl.
- Make the dressing: In a small bowl, stir together ranch dressing, fresh lime juice, and hot sauce if desired for a spicy kick.
- Toss and serve: Drizzle the dressing over the salad and gently toss to combine. Top with crunchy tortilla strips just before serving to maintain crispiness.
Notes
- For extra heat, add sliced jalapeños or use a spicy taco seasoning blend.
- Leftover grilled or roasted chicken can be substituted for freshly cooked chicken.
- Store salad components and dressing separately for up to 3 days refrigerated; add tortilla strips just before serving.
- Rinse canned black beans well to prevent salad from becoming watery.
- Substitute cheddar with pepper jack or a Mexican cheese blend for varied flavors.
- For a vegetarian version, omit chicken and add extra beans or chickpeas.
- Serve alongside salsa, guacamole, or tortilla chips for a complete meal.
